Chicken and Apricot Rice Salad

makes 8 cups

Ingredients

2 tablespoons rice vinegar
2 tablespoons lime juice
2 tablespoons olive oil
1 tablespoon honey
1/2 teaspoon ground ginger
4 cups cooked wild or brown rice
2 cups oven-roasted chicken, chopped
1 cup dried apricots, cut into strips
1/2 cup dried cranberries
1 cup chopped green onions
1/3 cup sliced almonds, toasted (optional)

Chicken and Apricot Rice Salad

Directions

1. In small bowl, whisk together rice vinegar, lime juice, oil, honey and ginger; set aside.
2.  n large bowl, combine remaining ingredients except almonds. Combine with dressing and refrigerate.
3. When serving, toss with almonds, if desired.

Per serving: 277 calories, 7g fat, 1g saturated fat, 30mg cholesterol, 111mg sodium, 39g carbohydrate, 4g dietary fiber, 19g sugars, 16g protein
