Cucumber Salsa

This is a fresh take on a traditional sliced cucumber and onion salad – you know the one that shows up at all of your family picnics and potlucks. We kicked up the flavor with the addition of jalapeño pepper and some adobo seasoning which you can find in your Outpost bulk herbs and spices department. Enjoy!

Ingredients

2 cups cucumber, seeded and diced
1/2 cup tomato, seeded and chopped
1/4 cup red onion, finely chopped
2 tablespoons fresh parsley, minced
1 jalepeño pepper, seeded and finely chopped
1/4 cup fresh cilantro, chopped
1 garlic clove, minced
1/4 cup Daisy Light sour cream
1 tablespoon lemon juice
1 tablespoon lime juice
1/4 teaspoon ground cumin
1/4 teaspoon adobo seasoning

Directions

1.  In a small bowl, combine the first seven ingredients.
2.  In another bowl combine the sour cream, lemon juice, lime juice, cumin and adobo seasoning. Pour over cucumber mixture and toss gently to coat.

Per serving: 34 calories, 1g fat, 7g carbohydrates, 2g protein, 11mg sodium, 2g fiber
