Rainbow Slaw Salad

This colorful slaw is crunchy and delicious. Even kids will enjoy it. It's a perfect side dish and is also great as a burger topping.  
makes 8 servings

Ingredients

1/4 cup honey
1/4 cup lime juice
2 tablespoons vinegar
1 tablespoon ground cumin
1/2 teaspoon salt
1/4 teaspoon ground pepper
1/3 cup olive oil
3 cups red cabbage, shredded
1 cup carrot, shredded
4 green onions, thinly sliced
1 cup sugar snap peas, quartered
1 red pepper, thinly sliced
1 yellow pepper, thinly sliced
1/2 cup chopped cilantro

Directions

1. In a small bowl, whisk together honey, lime juice, vinegar, cumin, salt and pepper. Slowly whisk in the olive oil. Set aside.
2. In a large bowl, combine red cabbage, carrots, green onions, sugar snap peas, red pepper and yellow pepper. Give a toss and add cilantro.
3. Pour the dressing over the slaw and toss until coated. Serve chilled.
