Daikon, Carrot and Broccoli Slaw

This crisp, fresh salad is a perfect late winter pick-me-up and pairs wonderfully with take-out sushi.  
makes 4 to 6 serving

Ingredients

8 ounces daikon (Japanese white radish), peeled and grated (about 1/2 large)
1 large carrot, peeled and grated
4 broccoli stems, peeled and grated
1 cup chopped green onions
1/3 cup rice vinegar
2 tablespoons fresh ginger, peeled and minced
1-1/2 tablespoons sesame oil or olive oil
1 teaspoon chili-garlic sauce or 1/2 teaspoon red pepper flakes

Directions

1. Add daikon, carrot, broccoli stems and green onions to a large bowl.
2. Whisk vinegar, ginger, oil and chili-garlic sauce in small bowl to blend; pour over vegetables and toss to coat. Season with salt and serve.

Per serving: 108 calories, 6g fat, 1g sat fat, 14g carbohydrates, 4g protein, 53mg sodium, 2g fiber
