Salsa Mac with Colby Jack

Fancy pants mac 'n cheese. Serve with a salad, fruit and a glass of milk for a very satisfying lunch or light dinner. Packed with calcium, too!
serves 6

Ingredients

1 cup uncooked whole grain elbow macaroni
1 medium tomato, diced
1⁄2 small green bell pepper, diced
1⁄2 small onion, diced
1 tablespoon butter
1 tablespoon unbleached flour
1 1⁄4 cups 1% low-fat milk
8 ounces low-fat Colby Jack or cheddar cheese, shredded

Salsa Mac with Colby Jack

Directions

  1. Preheat oven to 350°.
  2. Cook macaroni until al ‘dente. Drain cooked macaroni and add tomato and green pepper. Set aside.
  3. In medium saucepan, sauté diced onion in butter until translucent. Stir in flour and black pepper to form a paste. Add milk. Cook until slightly thickened and bubbly. Add cheese and stir until melted.
  4. Add macaroni/vegetable mixture to cheese sauce and coat evenly.
  5. Transfer to a 9-inch baking pan or casserole dish. Bake 25–30 minutes or until bubbly. Cool 10 minutes before serving.
