Ed's Delish Pot Roast

Simple to make, delicious to eat, this tasty roast cooks right on your stovetop with little extra effort on your part! Serve with a crusty bread to catch all those flavorful juices.
serves 6

Ingredients

2 tablespoons canola oil
2 to 3 pounds beef chuck or eye of round roast
20 ounces apricot nectar
3 tablespoons red wine vinegar
Salt and pepper to taste
1 small red onion, sliced
8 to 10 small red potatoes, washed and cut into wedges
1 pound baby carrots

Ed's Delish Pot Roast

Directions

1. Heat canola oil in a large, heavy skillet over medium heat. Brown the meat on both sides.
2. Add apricot nectar to roast in skillet until roast is almost covered. Add red wine vinegar.
3. Season with salt and pepper and top the roast with sliced onions. Add potatoes and carrots to the liquid.
4. Bring to a boil then reduce heat to a low simmer, cover and cook 60 to 90 minutes, or until beef is fork-tender.

Per serving: 429 calories, 12g total fat, 3g sat fat, 45g carbohydrates, 36g protein, 140mg sodium, 4g fiber
