Don’t let the name scare you – this is an easy recipe with delicious results. Serve with green beans and roasted potatoes.

Ingredients

4 boneless, skinless chicken breasts,
4 thin slices of Black Forest ham
4 thin slices of gruyere, Swiss or provolone cheese
1 egg
½ teaspoon salt
¼ teaspoon pepper
¼ teaspoon paprika
¾ cup whole grain bread crumbs
Cooking oil spray

Chicken Cordon Bleu

Directions

1. Heat oven to 400 degrees. Coat a 13x9-inch baking pan with
cooking oil spray. Place chicken on a cutting board and pound with a mallet until about ¼-inch think and nearly square in shape.
2. Layer each breast with 1 slice of ham and 1 slice of cheese. Roll up and secure with a toothpick. Set aside.
3. Combine egg, salt, pepper and paprika in a small bowl. Place bread crumbs on a large platter or shallow dish.
4. Dip stuffed chicken breast in egg mixture then roll in bread crumbs, coating well. Place chicken rolls in prepared pan and bake for 40 minutes or until meat thermometer reaches 165 degrees. Remove toothpicks and serve hot.
