Pineapple Coconut Overnight Oatmeal

The perfect solution for a quick, healthy breakfast on the go. The first five ingredients are your base recipe. You can add any fruits, nuts or seeds you wish. In the morning, we like to add the nuts right before eating, so they stay crunchy. 
makes one serving.

Ingredients

1/4 cup uncooked thick rolled oats
1/2 cup coconut milk (the stuff you drink, not the stuff in the can you cook with)
1/4 cup low-fat Greek yogurt
1 1/2 teaspoons chia seeds
1 teaspoon ground flax seed
1 teaspoon honey (or substitute any preferred sweetener)
1/4 cup chopped pineapple (fresh, frozen or canned)

Pineapple Coconut Overnight Oatmeal

Directions

In a half pint (1 cup) jar, add oats, coconut milk, yogurt, chia seeds, ground flax seed and honey. Put lid on jar and shake until well combined. Remove lid, add pineapple and stir until mixed throughout. Return lid to jar and refrigerate overnight. Grab from your fridge the next morning and enjoy.

Per serving: 244 calories, 7g fat, 4g sat fat, 35g carbohydrates, 11g protein, 53mg sodium, 3g fiber, 369mg calcium
