Super Simple Breakfast Scramble

Made with vegetarian sausage and pretty much any veggies you have in your fridge, this is a hearty and versatile breakfast that feeds a hungry crowd (just make half a recipe for a smaller group).  
serves 7-8

Ingredients

1 14-ounce package Gimme Lean Ground Sausage (it comes in a tube)
1 medium onion, diced
1 16-ounce bag frozen hash browns
1 medium zucchini, diced
1/2 cup mushrooms, sliced
2 cloves garlic, minced
1 bell pepper, diced
3 tablespoons olive oil
3 ounces of your favorite cheese, grated
6 large eggs

Super Simple Breakfast Scramble

Directions

1. Heat olive oil in a large skillet over medium high heat. Add onion and hash browns, sauté about 10 minutes until hash browns start to brown. Add the veggies, garlic and Gimme Lean sausage, stir and sauté another 10 minutes or so, breaking up sausage.
2. Scramble eggs in a separate bowl (add a little milk if you like). Add eggs to skillet and stir around to combine. Sauté until eggs are cooked through. Sprinkle cheese over top of scramble and serve hot. Add salt and pepper to taste.
 

Per serving: 250 calories, 13g fat, 4g sat fat, 19g carbohydrates, 15g protein, 398mg sodium, 4g fiber, 141mg calcium
