Buckwheat Banana Pancakes

Ingredients

1 cup prepared buckwheat pancake/waffle mix

1 cup water

1 large banana, mashed

Directions

  1. In a medium-size bowl, blend the pancake mix, water and banana with an electric hand mixer.
  2. Preheat a nonstick skillet or griddle. Pour the pancake mixture onto the griddle and cook for 1½ to 2½ minutes. Turn pancakes over and cook for another minute. Transfer pancakes to plate and serve with syrup or fruit sauce. 

Per serving: 275 calories, 2g fat, 36g carbohydrates, 9g protein, 290mg sodium, 7g fiber
