Roasted Garlic Spread

Jump into a big pile of tasty garlic for your next party. This spread is so easy to make you'll laugh yourself silly just thinking about it. And rest assured - the roasting process allows the pungent garlic to mellow out, while at the same time caramelizing the cloves, adding a little sweetness. Kind of like what happens when you slowly caramelize onions.

Ingredients

2 garlic heads

2 teaspoons olive oil

Roasted Garlic Spread

Directions

  1. Preheat oven to 325°.
  2. Cut about 1/4 inch off the top of the garlic bulb, leaving the tops of the cloves exposed. Do not remove the papery outer layers - the garlic will actually roast inside them.
  3. Place bulbs on a piece of heavy duty aluminum foil. Drizzle olive oil over the tops.
  4. Seal tightly and bake for 35 - 40 minutes.
  5. Let cool to touch. Fully roasted cloves will easily be scooped out into a bowl and mashed into a spread, or pressed out one at a time onto a toasted, crusty bread and spread with a knife.
