Once again: no raw tahini

Once Again Nut Butter, Inc. has distributed a press release explaining its decision not to feature raw tahini in its product line, despite consumer interest. In a nutshell, the reason is food safety.

Quality Assurance Manager George Tucker writes:
"There was a nationwide recall on MaraNatha Sesame Tahini several months ago due to salmonella contamination. Because of this recall, MaraNatha has discontinued the product line. This problem is not an isolated incidence and has occurred worldwide.

We need to keep in mind the nature of the product. First, it is cultivated in many third world countries where good agriculture practices are not always followed.Pathogens can contaminate the seeds and plants in the form of untreated manure, animal and human feces. Even with microbiological screening, pockets on contaminated seed can make it into the product stream. Without the kill step of roasting, it is an unacceptable risk to our customers ... Once Again Nut Butter has chosen not to add raw tahini to our product line."
