When his health started deteriorating, PJ Ramstack changed his diet. He found that his health improved after he stopped eating gluten. Unfortunately, he didn’t have much luck finding gluten-free bread that had the taste and texture he was looking for.
PJ noticed that most of the breads were filled primarily with starches and didn’t taste like the classic, homemade bread he craved. So, he started Rustic Kitchen, a certified gluten-free bakery in Oshkosh.
There are a number of bakeries around Wisconsin that make gluten-free desserts and pastries, but not as many doing bread. Bread seems to be the harder thing to find, according to PJ’s customers. So, that’s what he has the most fun developing.
The bakery uses whole grain, non-GMO flours, minimizing the use of starch and overly processed flour. The result is healthier gluten-free bread that has both a great taste and texture. Unlike a lot of other gluten-free businesses, PJ doesn’t use soy in any of his products.
